We're in to March now, and that means St. Paddy's Day will soon be upon us! Sure, sure, there are going to be abundant radioactive green shamrock milk shakes and confectionaries in store windows everywhere.
But have you ever wondered what's really
in some of that stuff?
Nothing in nature is the shade of green of those St. Paddy's Day inspired goodies. Well, actually, there are but I guarantee nothing in nature is responsible for the green glow of 99% of those products.
shake, however, owes all of its brilliant green colour to nature. It's fresh, healthy, satisfying, and super easy to make. All you need to make this is some spinach, frozen banana, avocado, dairy free milk, fresh peppermint or peppermint extract, and raw cacao nibs. Here's the shakedown:
1 ripe banana, cut into chunks and frozen
Leaves from 2 sprigs fresh peppermint or peppermint extract to taste (½-1 tsp) (optional)
2 tbsp cacao nibs
Start by blending the spinach with the milk in a blender or food processor. I let all of the leaves get totally blended in the milk before adding anything else to make sure they were totally blitzed so I didn't end up with big chunks of spinach leaves. Then add in your avocado, peppermint leaves or extract, and frozen banana chunks. Blitz until smooth and creamy. Add half the cacao nibs and pulse to mix through without breaking them up. Pour into a glass and top with remaining cacao nibs. Garnish with a sprig of peppermint if you're feeling fancy.
This makes enough for two normal servings or one really big one.

Et voila! Now you can celebrate St. Paddy's Day without the fear of becoming radioactive. In fact, you can feel really good about everything in this smoothie. Vitamin A and iron from the spinach, potassium, fibre, and healthy monounsaturated fat from the avocado that will keep you satiated, and antioxidant packed cacao nibs. Cheers to that!
